More validation for my choice to give up wheat and grains.  I am 3 weeks in at the time of writing this, and I already feel better.  My energy is MUCH better.  My mood is better.  My belly feels better (I have IBS).  I’ve lost 9 lbs.  I’m not dealing with constant hunger or cravings.

I know this is an extreme dietary change.  One that many cannot fathom embracing.  I get it.  I’m not advocating or pressuring anyone to do anything that they aren’t ready for or comfortable with.

In my personal world over here, my goal is to get my kids to eat Paleo (no grains (which means no wheat…which means no gluten), no legumes, no dairy, no processed foods, limited sugars) MOST of the time.  I’m starting with dinners.  I’m cooking for the family and am going to slowly eliminate the grains for dinner meals.  I’ll go from there.
